Violet Cooler

Ingredients:
deep purple wild violets granulated sugar
juice of lemon
Instructions:
Pick enough blossoms of deep purple wild violets to
fill a glass jar.
Rinse the blossoms in cold water; remove the green stalks
and the calyxes
Put the violets in the jar and fill it almost to the brim
with boiling water.
Cover and leave it to stand overnight.
The next morning strain out the violets. For each cup
of liquid add 2 cups
of granulated sugar and the juice of half a lemon. Bring
this mixture to a boil. Pour it into a sterile bottle and
refrigerate for UP TO 6 months, but if it starts to ferment
throw it out.
Pour a little over ice and add water, sparkling water or
iced tea to taste.
Comments:
Here are a couple of herbal recipes that I like a good deal
try them if you like something different and refreshing: For
those of you who like anise flavor this is nice...I use it
in iced tea. As an aside it is also a good expectorant.
[A hint from my trials: it doesn't ferment if you use
canning pints or quarts to seal it]
[it can be frozen also if you want to save some for winter
use].
