  2. Violet Cooler

  7. Ingredients:
  8. deep purple wild violets      granulated sugar
  9. juice of lemon                
  10.  
  11. Instructions:
  12.      Pick enough blossoms of deep purple wild violets to
  13. fill a glass jar.
  14. Rinse the blossoms in cold water; remove the green stalks
  15. and the calyxes
  16. Put the violets in the jar and fill it almost to the brim
  17. with boiling water.
  18. Cover and leave it to stand overnight.
  19.     The next morning strain out the violets.  For each cup
  20. of liquid add 2 cups
  21. of granulated sugar and the juice of half a lemon.  Bring
  22. this mixture to a boil.  Pour it into a sterile bottle and
  23. refrigerate for UP TO 6 months, but if it starts to ferment
  24. throw it out.
  25.     Pour a little over ice and add water, sparkling water or
  26. iced tea to taste.

  29. Here are a couple of herbal recipes that I like a good deal
  30. try them if you like something different and refreshing: For
  31. those of you who like anise flavor this is nice...I use it
  32. in iced tea. As an aside it is also a good expectorant.

  34. canning pints or quarts to seal it]
